1. Preheat oven to 350°F. Grease or spray a 9×5-inch loaf pan; set aside.
2. In a medium bowl, whisk together flour, baking soda, ground cinnamon and salt; set aside.
3. In a small saucepan over medium heat, add milk and heat until it’s just about to simmer. Remove from heat and steep with 4 bags of TAZO® Awake® Tea for 5 minutes. Remove bags and squeeze out as much tea as possible.
4. In a stand-in mixer using the paddle attachment, cream together butter and sugar on medium high for a few minutes until smooth. Slowly add eggs one at a time, beating after each addition. Beat in the bananas, milk and vanilla extract until combined. With mixer on low speed, slowly add dry ingredients into wet ingredients until just combined. Be careful not to over mix. Fold in coconut flakes and chocolate chips if using.
5. Pour batter into prepared baking pan and bake for 60-65 minutes or when a toothpick inserted in the center of the loaf comes out clean. Cover top of bread loosely with aluminum foil after 30 minutes to prevent the top from getting too brown.
6. Remove from oven and allow bread to cool completely in the pan set on a wire rack. Remove loaf from pan and allow to cool additional 10 minutes.
